  • 1 cup (200 g) sugar
  • 1 cup (240 ml) water
  • ⅓ cup (45 g) chopped pistachios, or 2 tbsp pistachio paste
  • Pinch of salt; ¼ tsp vanilla; ¼ tsp almond extract (optional)

Method

  1. Simmer sugar, water, pistachios and salt, stirring to dissolve, for 10 minutes.
  2. Steep off the heat, covered, 20-30 minutes.
  3. Stir in the extracts.
  4. Strain (through cheesecloth for clear, or blend first for richer) and bottle.

Two textures: clear or creamy

You can take this two ways. Steep and strain the chopped nuts for a thinner, clearer syrup that dissolves cleanly into iced drinks and cocktails. Or blend the syrup with the nuts (or use paste) before straining for a richer, cloudier syrup that's fuller in milk drinks and has more body. The clear version keeps longer and looks neater; the creamy one tastes more strongly of pistachio. For most coffee uses, the creamy paste-based version is the easier win.

  • Pistachio latte: 1-2 tbsp into espresso, topped with steamed milk.
  • Pistachio cold foam: sweeten the foam, or the drink underneath it.

The almond-extract trick

A quarter-teaspoon of almond extract is optional but does real work: it amplifies the perceived pistachio flavor, which is exactly why so many commercial pistachio syrups and ice creams lean on almond. Use it lightly. Too much and it tastes of marzipan rather than pistachio.

Storage

Keep it in a sealed bottle in the fridge for two to three weeks. Because it carries real nut solids, it won't last as long as a plain sugar syrup, so make small batches. Shake before each use, as a creamy syrup will settle.
